Linseed oil is good, and fast...but seems to leave an odor that never quite goes away. Wake's "A Luthier's Scrapbook" gives a simplified method for applying French polish to the neck. It's not at all hard to do, and it leaves a silky finish that makes sliding/slurred notes a pleasure. It's much superior to bare wood, IMHO. I scraped the lacquer from the neck of a cheap Chinese viola and employed this method, with good results.
