Does age matter?

When you guys start to sit at the workbench and try to bring your theorys in practice?

Every day, always... at least, for me. If you can't put it into practice and get positive results, either the theory is wrong or it's right and useless.

If the theory is that old wood is beneficial, but doesn't age well untill it has been carved into a thin plate, then that's pretty useless for a maker.

However, if there's some way to artificially age the wood that doesn't require it to be thin, then maybe that's worth testing ;)

(for those who are new or haven't been paying attention, that last one is what I've got on my workbench right now)
